all started back in 1975, when a young man from Michoacán named Inocencio Carbajal, better known as “El Güero,”arrived in Chicago with a dream and a family recipe straight from his hometown: authentic carnitas from Uruapan, Michoacán.
Armed with nothing but his flavor, passion for Mexican food, and an unshakable determination, El Güero opened his first spot in the heart of Pilsen. It didn’t take long for the mouthwatering aroma of freshly made carnitas to draw in neighbors, workers, and families from all over. Soon, Carnitas Uruapan wasn’t just a restaurant—it became a neighborhood staple, a little taste of Mexico in Chicago, and El Güero, a local legend.
